herbalist tips
cover while steeping: a lid keeps the mint's cooling oils in your tea instead of in the steam.
sweeten while warm: honey dissolves best before the tea cools down.
make a pitcher: multiply the recipe by four and keep it chilled for up to 3 days.
ice cube trick: freeze some of the tea in ice cube trays so your glass stays strong and cold.
good to know
if you are pregnant, nursing, taking blood pressure, thyroid, or sedative medication, or have a thyroid condition, check with your healthcare provider before using lemon balm or hibiscus. honey should not be given to children under 1 year old.
