lemon lavender sleepy syrup

lemon lavender sleepy syrup

a sweet spoonful for winding down.

20 min | makes about 1¼ cups | caffeine-free | keep chilled

this kitchen-crafted syrup blends floral lavender with bright, lemony lemon balm and raw honey for a soft, soothing sweetness. both herbs are traditionally enjoyed as part of evening rituals, so keep a jar close for slow nights and quiet moments before bed.

ingredients

2 tbsp dried lavender
2 tbsp dried lemon balm
1 cup water
¾ cup raw honey

optional add-ins:
1 tbsp dried chamomile for a softer, apple-like note
a strip of fresh lemon peel while simmering
a splash of vanilla extract after straining

you'll also need: a small saucepan with a lid, a fine mesh strainer, and a clean glass jar

instructions

1. simmer lavender and lemon balm in 1 cup of water for 10 minutes, covered.
2. strain out the herbs and stir in the honey while the liquid is still warm.
3. pour into a sealed glass jar and store in the fridge for up to 3 to 4 weeks.
4. enjoy 1 to 2 teaspoons as part of your wind-down routine, on its own or stirred into warm tea or milk.

herbalist tips

cover the pot: a lid keeps the delicate lavender and lemon balm aromas from floating away with the steam.

go easy on lavender: too much can taste soapy. if you're new to it, start with 1 tbsp and adjust to your taste.

keep it warm, not hot: stir in raw honey once the liquid has cooled slightly to keep its natural character.

pair it: drizzle into a cup of chamomile or a warm oat milk latte for a cozy bedtime sip.

good to know

honey should not be given to children under 1 year old. lemon balm may cause drowsiness, so avoid driving after enjoying it. if you are pregnant, nursing, taking sedatives or thyroid medication, or have a thyroid condition, check with your healthcare provider before using lemon balm or lavender. discard the syrup if you notice mold, fizzing, or an off smell.
