10 min | serves 1 | contains caffeine | hot or iced

this café classic steeps bold, citrusy earl grey with a whisper of lavender, then finishes with steamed milk and a touch of vanilla. it's soft, floral, and perfect for rainy mornings, reading breaks, and slow afternoons.

ingredients

1 tbsp earl grey tea
½ tsp dried lavender (optional)
½ cup hot water
½ cup milk of choice
1 to 2 tsp raw honey or maple syrup
¼ tsp vanilla extract

optional add-ins:
a sprinkle of dried lavender buds on top
a pinch of ground cinnamon
our blended sweeteners in place of honey

you'll also need: a tea infuser or reusable tea bag, a small pot, and a milk frother (optional)

instructions

1. pour ½ cup of hot water, just off the boil, over the earl grey and lavender. steep for 4 minutes, then strain.
2. warm the milk in a small pot until steaming, then froth if desired.
3. stir the honey and vanilla into the tea.
4. pour in the steamed milk, spoon the foam on top, and sip slowly.

herbalist tips

don't over-steep: black tea turns bitter past 5 minutes, so set a timer.

go easy on lavender: a little goes a long way. too much can taste soapy.

make it iced: steep with half the water, let it cool, then pour over ice with cold milk and vanilla.

no frother? shake warm milk in a sealed jar for 30 seconds for an easy foam.

good to know

earl grey is a black tea and contains caffeine. if you are pregnant, nursing, or sensitive to caffeine, enjoy in moderation and check with your healthcare provider. honey should not be given to children under 1 year old.
