pumpkin spice, made the slow way.
10 min | serves 1 | caffeinated | hot or iced
our golden chai brings darjeeling black tea together with ginger, cinnamon, cardamom, clove, black pepper, and real pumpkin. simmered on the stove with milk, it becomes a creamy, deeply spiced latte that tastes like fall without a single pump of syrup.
ingredients
2 tsp golden chai tea
½ cup water
¾ cup milk of choice
1 to 2 tsp maple syrup or raw honey
pinch of ground cinnamon for topping
optional add-ins:
1 tbsp pumpkin purée for an extra creamy, pumpkin-forward cup
a splash of vanilla extract
a shot of espresso for a dirty chai
whipped cream on top
you'll also need: a small pot, a fine mesh strainer, and a milk frother (optional)
instructions
1. bring ½ cup of water to a boil in a small pot. add the tea and simmer gently for 3 minutes.
2. pour in the milk (and pumpkin purée, if using) and warm until steaming, about 2 minutes. do not let it boil.
3. strain into your mug and stir in the maple or honey.
4. froth the top if you like, finish with a pinch of cinnamon, and enjoy.
herbalist tips
simmer, do not steep: simmering pulls more flavor from the whole spices, but keep it to 3 to 5 minutes total so the black tea stays smooth.
trust the pepper: black pepper is what gives chai its gentle warmth on the back of the throat. it balances the sweetness of the pumpkin.
make it iced: simmer the tea in water only, cool, and pour over ice with cold milk and a drizzle of maple.
batch it: simmer a double-strength concentrate and keep it in the fridge for up to 3 days. mix half and half with milk to serve.
